Potato Beef Croquettes

2 eggs
1 pound ground beef, cooked and drained
2 cups cold mashed potatoes (prepared with milk and butter)
1 medium onion, chopped
½ tsp salt
¼ tsp pepper
1 cup crushed crackers
vegetable oil for frying


In a large bowl, beat 1 egg. Add the beef, potatoes, onion, salt, pepper and mix well. Shape into 12 oval patties or any shape you desire. Beat remaining egg; dip balls into beaten egg, then roll in the cracker crumbs. In an oven or deep-fat fryer, heat oil to 375 degrees F. Fry croquettes, four at a time, for approx. 2 min. or until golden brown, turning occasionally. Drain on paper towel. Serve with your favourite dressing!
